This recipe uses the "Pakki" method (where the meat and rice are partially cooked separately before layering), which is very common and easier to control for beginners. The magic lies in the Yakhni (the aromatic broth) and the layered dum cooking.

Part 1: The Biryani Masala Blend

Ingredients for Biryani Masala:

  • 2-inch Cinnamon stick (Dalchini)
  • 6-8 Green Cardamoms (Elaichi)
  • 10-12 Cloves (Laung)
  • 1 tbsp Cumin Seeds (Zeera)
  • 1 tbsp Coriander Seeds (Dhaniya)
  • 1 Black Cardamom (Badi Elaichi)
  • 1 tsp Black Peppercorns (Kali Mirch)
  • 2-3 Bay Leaves (Tej Patta)
  • 1/2 tsp Nutmeg powder (Jaiphal) - optional

Method:
Dry roast all the whole spices (except nutmeg) on a low flame until fragrant. Let them cool. Grind into a fine powder with the nutmeg. Set aside.


Part 2: The Main Recipe

A. For the Yakhni (Meat Broth) and Meat:

  • 1 kg Beef (with bone, cut into pieces) - shank or shoulder is good
  • 2 large Onions, sliced
  • 1/4 cup Cooking Oil
  • 2 tbsp Ginger-Garlic Paste
  • 2 tbsp plain Yogurt, whisked
  • 1/2 cup Fried Onions (Birista)
  • 1/2 cup fresh Mint Leaves, chopped
  • 1/2 cup fresh Coriander Leaves, chopped
  • 4-6 Green Chilies, whole or slit
  • 2 medium Tomatoes, chopped
  • 1 tsp Turmeric powder
  • Salt to taste
  • Water, as needed

B. For the Rice:

  • 750 gm Basmati Rice
  • 2-3 tbsp Salt (for the boiling water)
  • 4-5 Green Cardamoms
  • 4-5 Cloves
  • 2-inch Cinnamon stick
  • 1 Bay Leaf

C. For Layering and Dum:

  • 1/2 cup Fried Onions (Birista)
  • 1/4 cup fresh Mint Leaves
  • 1/4 cup fresh Coriander Leaves
  • 1/4 cup Milk
  • 1/2 tsp Saffron strands (Kesar), soaked in 2 tbsp warm milk
  • 1 tsp Kewra Water (screwpine essence) - This is a key Pakistani ingredient!
  • 1/4 cup Ghee
  • 2 tbsp Lemon Juice
  • Yellow food color (optional, but traditional)

Method: The Step-by-Step Guide

Step 1: Prepare the Yakhni (Meat Curry)

  1. In a large pot, heat oil. Add the sliced onions and fry until golden brown.
  2. Add the ginger-garlic paste and fry for 1 minute until the raw smell disappears.
  3. Add the beef pieces and sear on high heat until they change color.
  4. Add the whisked yogurt, chopped tomatoes, turmeric, salt, and the freshly ground biryani masala you prepared. Cook for 5-7 minutes until the tomatoes are soft and the oil starts to separate.
  5. Add enough water to cover the meat by about 2 inches. Bring to a boil, then reduce the heat, cover, and let it simmer for 1 to 1.5 hours or until the beef is about 80% tender. The meat should not be falling off the bone yet.
  6. The liquid left in the pot is your Yakhni. You should have about 2-3 cups of it. If there's too much, simmer uncovered to reduce it. The Yakhni should be flavorful and slightly thick.

Step 2: Prepare the Rice

  1. Wash and soak the basmati rice for 30 minutes.
  2. In a large pot, bring a generous amount of water to a rolling boil. Add salt and the whole spices (cardamom, cloves, cinnamon, bay leaf).
  3. Drain the soaked rice and add it to the boiling water.
  4. Cook until the rice is 70% cooked (the grain should be firm in the center). Drain immediately.

Step 3: The Layering (Tahiree)

  1. In the same pot you cooked the meat (or a heavy-bottomed handi), start assembling.
  2. First Layer: Spread the cooked beef evenly at the bottom. Pour about 1 cup of the reserved Yakhni over it.
  3. Second Layer: Sprinkle half of the fried onions, mint, coriander, and green chilies over the meat.
  4. Third Layer: Gently spread the par-boiled rice over the meat layer to form an even top.
  5. Final Touch: Sprinkle the remaining fried onions, mint, and coriander. Drizzle the saffron milk, kewra water, plain milk, lemon juice, and ghee all over the top. For a traditional look, drizzle a line of yellow food color mixed with a little milk.

Step 4: The Dum (Slow Steam Cooking)

  1. Cover the pot with a tight-fitting lid. You can seal it with aluminum foil or dough for a better dum.
  2. Place the pot on the lowest possible heat for 25-30 minutes.
  3. Let the biryani rest for 15 minutes after turning off the heat. DO NOT OPEN THE LID during this time.

Step 5: Serving the Biryani

  1. Open the lid gently to preserve the aroma.
  2. To serve, dig from the bottom with a large spoon to get the meat and rice together onto a plate.
  3. Serve hot with Cucumber Raita, Kachumbar Salad, and Dahi Bhallay.

Key Differences & Pro-Tips for Pakistani Biryani

  • Kewra Water vs. Rose Water: While Hyderabad often uses rose water, Pakistani biryani is defined by kewra water. It gives a unique, floral, and savory aroma. Don't skip it!
  • The Yakhni: The broth is the soul. Its flavor must be concentrated. Tasting and adjusting salt and spices at this stage is crucial.
  • "Pakki" vs. "Kacchi": This recipe uses the "Pakki" method, which is more forgiving. The "Kacchi" method (with raw marinated meat) is also popular but requires more precision.
  • Color: The use of yellow or orange food color is very common in Pakistani biryani for that vibrant, festive look.
  • Meat Choice: Beef is classic for Karachi biryani, but you can use goat/mutton or chicken. Adjust cooking times accordingly (chicken will need much less time to cook in the Yakhni).

भाग 1: बिरयानी मसाला (इसे पहले बना लें)

  • 1/2 कप तले हुए प्याज (बरिस्ता)
  • 1/2 कप पुदीना, बारीक कटा हुआ
  • 1/2 कप धनिया, बारीक कटा हुआ
  • 4-6 हरी मिर्च
  • 2 मध्यम टमाटर, कटे हुए
  • 1 छोटा चम्मच हल्दी पाउडर
  • स्वादानुसार नमक
  • पानी जरूरत के हिसाब से

B. चावल के लिए:

  • 750 ग्राम बासमती चावल
  • 2-3 बड़े चम्मच नमक (उबलते पानी के लिए)
  • 4-5 हरी इलाइची
  • 4-5 लौंग
  • 2 इंच दालचीनी
  • 1 तेज पत्ता

C. लेयरिंग और दम के लिए:

  • 1/2 कप तले हुए प्याज
  • 1/4 कप पुदीना
  • 1/4 कप धनिया
  • 1/4 कप दूध
  • 1/2 छोटा चम्मच ज़फरान, 2 बड़े चम्मच गर्म दूध में भिगोया हुआ
  • 1 छोटा चम्मच केवड़ा पानी (यह पाकिस्तानी बिरयानी की खासियत है!)
  • 1/4 कप घी
  • 2 बड़े चम्मच नींबू का रस
  • पीला फूड कलर (वैकल्पिक)

बनाने का तरीका

स्टेप 1: यखनी (मांस का शोरबा) तैयार करें

  1. एक बड़े बर्तन में तेल गर्म करें। इसमें कटे हुए प्याज को सुनहरा होने तक भूनें।
  2. अदरक-लहसुन पेस्ट डालकर 1 मिनट भूनें।
  3. बीफ के टुकड़े डालकर अच्छी तरह सीयर करें।
  4. दही, टमाटर, हल्दी, नमक और तैयार बिरयानी मसाला डालें। 5-7 मिनट तक पकाएं।
  5. मांस को ढकने लायक पानी डालें (लगभग 2 इंच ऊपर तक)। ढककर 1 से 1.5 घंटे तक पकाएं जब तक मांस 80% तक नरम न हो जाए।
  6. बचे हुए शोरबा (यखनी) को अलग निकाल लें। लगभग 2-3 कप यखनी रहनी चाहिए।

स्टेप 2: चावल तैयार करें

  1. चावल धोकर 30 मिनट के लिए भिगो दें।
  2. एक बड़े बर्तन में पानी उबालें। इसमें नमक और साबुत मसाले डालें।
  3. भीगे हुए चावल डालकर 70% पकने तक उबालें। फिर छान लें।

स्टेप 3: लेयरिंग (तह लगाना)

  1. मांस वाले बर्तन में ही लेयरिंग शुरू करें।
  2. पहली लेयर: पका हुआ मांस बर्तन के तले पर फैला दें। ऊपर से 1 कप यखनी डाल दें।
  3. दूसरी लेयर: आधे तले प्याज, पुदीना, धनिया और हरी मिर्च डाल दें।
  4. तीसरी लेयर: चावल को धीरे से मांस के ऊपर फैला दें।
  5. आखिरी टच: बचे हुए तले प्याज, पुदीना-धनिया डालें। ज़फरान वाला दूध, केवड़ा पानी, सादा दूध, नींबू का रस और घी डाल दें। पीले फूड कलर से सजाएं।

स्टेप 4: दम पर पकाना

  1. बर्तन को कसकर ढक दें। आटे से सील कर दें।
  2. बहुत धीमी आंच पर 25-30 मिनट के लिए रख दें।
  3. गैस बंद करके 15 मिनट तक ढका हुआ ही रहने दें। ढक्कन न खोलें।

स्टेप 5: परोसना

  1. धीरे से ढक्कन खोलें।
  2. चम्मच से नीचे तक से मांस और चावल निकालकर परोसें।
  3. ककड़ी रायता, कचुम्बर सलाद और दही भल्ले के साथ गर्मागर्म परोसें।

पाकिस्तानी बिरयानी की खास बातें

  • केवड़ा पानी: यह पाकिस्तानी बिरयानी की पहचान है। इसे कभी न छोड़ें।
  • यखनी: शोरबा गाढ़ा और स्वादिष्ट होना चाहिए।
  • रंग: पीले रंग का इस्तेमाल परंपरागत है।
  • मांस: बीफ सबसे पॉपुलर है, लेकिन मटन या चिकन भी इस्तेमाल कर सकते हैं।

यह बिरयानी बनाने में थोड़ी मेहनत लगती है, लेकिन स्वाद इतना लाजवाब होता है कि सब कुछ सही लगता है!
