Classic Nepali Steamed Momos (म:म:)
This recipe is broken down into four parts:

Part 1: The Momo Wrapper (Dough)
The key to good momos is a thin, soft, yet sturdy wrapper.
Ingredients:
- 2 cups
all-purpose flour (maida)
- ½
teaspoon salt
- ¾ cup
warm water (approximately)
- 1
teaspoon oil (optional, for softer dough)
Instructions:
- In a
large mixing bowl, combine the flour and salt.
- Gradually
add the warm water while mixing with your fingers or a spoon. Add just
enough water to form a rough dough.
- Knead
the dough on a lightly floured surface for 8-10 minutes until it becomes
smooth, soft, and elastic. The longer you knead, the softer your wrappers
will be.
- Coat
the dough ball lightly with oil, cover it with a damp cloth or plastic
wrap, and let it rest for at least 30 minutes. This is a crucial step for
a pliable dough.
Part 2: Classic Buff/Chicken Filling
This is the most traditional and beloved filling.
Ingredients:
- 500g
ground buffalo meat (Buff) or chicken (kukhura)
- 1 cup
finely chopped onion
- ½ cup
finely chopped cilantro (dhaniya)
- ¼ cup
finely chopped green onions (spring onion)
- 1
tablespoon minced garlic (lasun)
- 1
tablespoon minced ginger (aduwa)
- 1-2
fresh green chilies, finely minced (adjust to your spice level)
- 1
teaspoon ground cumin (jeera)
- ½
teaspoon ground turmeric (besar)
- ½
teaspoon timur (Sichuan pepper) - highly recommended for authentic taste,
or use black pepper
- 1
tablespoon cooking oil
- Salt
to taste
Instructions:
- In a
large bowl, combine the ground meat, onion, cilantro, green onions,
garlic, ginger, and green chilies.
- Add
all the spices: cumin, turmeric, timur (or black pepper), and salt.
- Pour
in the cooking oil.
- Mix
everything thoroughly with your hands for 5-7 minutes. This
"whips" the meat and makes the filling bind together and become
juicy. The mixture should be moist but not watery.
Part 3: Vegetable Filling (Tarkari Momo)
A delicious and popular alternative.
Ingredients:
- 2
cups finely shredded cabbage
- 1 cup
grated carrot
- ½ cup
finely chopped green beans
- ½ cup
finely chopped onion
- ¼ cup
finely chopped cilantro
- 2
tablespoons chopped green onions
- 1
tablespoon minced garlic
- 1
teaspoon minced ginger
- 1-2
green chilies, finely chopped
- 1
teaspoon ground cumin
- ½
teaspoon garam masala
- ½
teaspoon turmeric powder
- 2
tablespoons oil or melted butter
- Salt
to taste
Instructions:
- Mix
the shredded cabbage with ½ teaspoon of salt and let it sit for 10
minutes. Squeeze out all the excess water thoroughly. This step is
critical to prevent soggy momos.
- In a
bowl, combine the squeezed cabbage, grated carrot, green beans, onion,
cilantro, and green onions.
- Add
the garlic, ginger, green chilies, and all the spices.
- Add
the oil or butter and mix everything well. Taste and adjust seasoning.
Part 4: Assembling and Cooking the Momos
Shaping the Momos (The Classic Half-Moon Shape):
- Knead
the Dough: After resting, knead the dough for another minute.
- Make
a Log: Roll the dough into a long, thin log.
- Cut
into Pieces: Cut the log into small, equal-sized pieces (about
20-24 pieces).
- Roll
into Wrappers: Take one piece, flatten it with your palm, and
roll it into a very thin, round circle (about 3-4 inches in diameter).
Keep the other pieces covered. The edges should be thinner than the
center.
- Fill
and Fold:
- Place
one tablespoon of filling in the center of the wrapper.
- Moisten
the edges of the wrapper with a little water.
- For
the classic shape: Fold the wrapper in half over the filling to
form a semi-circle. Pinch the center at the top to seal.
- Starting
from one end, create a small pleat on the top layer of the dough and
press it onto the bottom layer. Continue pleating and sealing until you
reach the other end. Ensure it is tightly sealed.
- Repeat
with the remaining dough and filling.
Steaming the Momos:
- Grease
the steamer basket (or a plate that fits inside your steamer) lightly with
oil to prevent sticking.
- Arrange
the momos in the basket, ensuring they don't touch each other.
- Bring
water in the steamer to a rolling boil.
- Place
the steamer basket over the boiling water, cover with a lid, and steam
for 10-12 minutes for meat momos and 8-10 minutes for
vegetable momos.
- The
momos are done when the wrapper looks translucent and shiny. The meat
should be cooked through.
- Serve
immediately, hot off the steamer.
Part 5: The Essential Momo Achar (Dipper Sauce)
No momo is complete without this fiery, tangy sauce.
Ingredients:
- 4-5
medium ripe tomatoes
- 4-5
dried red chilies (soaked in warm water for 10 mins)
- 4-5
cloves garlic
- 1-inch
piece of ginger
- 2
tablespoons sesame seeds (til)
- 1
teaspoon cumin seeds
- 1
tablespoon cooking oil
- ½
teaspoon turmeric
- Salt
to taste
- 1
tablespoon fresh lemon juice or ½ teaspoon Szechwan pepper (timur) powder
for the "tingly" taste
Instructions:
- Roast
the sesame seeds and cumin seeds in a dry pan for a minute until fragrant.
Set aside.
- In
the same pan, boil the tomatoes until the skin starts to peel off. Let
them cool, then peel the skin.
- In a
blender, combine the peeled tomatoes, soaked red chilies (deseed for less
heat), garlic, ginger, roasted sesame, and cumin seeds. Blend into a
smooth paste.
- Heat
oil in a pan. Add the blended paste, turmeric, and salt.
- Cook
on medium heat for 5-7 minutes, stirring occasionally, until the raw smell
disappears and the oil starts to separate.
- Turn
off the heat. Stir in the lemon juice or timur powder.
- Let
it cool before serving. The achar can be stored in a jar in the
refrigerator for weeks.
Pro-Tips for Perfect Momos:
- Dough
is Key: Don't skip the resting time for the dough. A well-rested
dough is easy to roll and doesn't tear.
- Roll
Thin: The thinner you roll the wrappers, the better the momos
will be.
- Don't
Overfill: Overfilling makes them difficult to seal and can cause
them to burst open while steaming.
- Squeeze
Veggies: Never skip squeezing the water out of the cabbage for
vegetable momos.
- Serve
Hot: Momos are best enjoyed straight out of the steamer.
- Jhol
Momo Variation: For a soupy "Jhol Momo," create a thin,
watery achar with a base of blended tomato, sesame, and spices, and then
pour it over your steamed momos in a bowl.

Momos) बनाने की विधि

भाग
1: मोमो का आटा (खोल)
अच्छे
मोमो की पहचान है
उसका पतला, नरम और मजबूत
खोल।
सामग्री:
- २ कप मैदा
- ½ छोटा चम्मच नमक
- ¾ कप गुनगुना पानी (लगभग)
- १ छोटा चम्मच तेल (वैकल्पिक, आटा नरम रखने के लिए)
बनाने
की विधि:
- एक बड़े कटोरे में मैदा और नमक मिला लें।
- अब इसमें धीरे-धीरे गुनगुना पानी डालते हुए हाथों से मिलाएं। केवल इतना पानी डालें कि एक सख्त आटा गूंथ जाए।
- आटे को ८-१० मिनट तक अच्छी तरह गूंथें जब तक वह चिकना, नरम और लचीला न हो जाए।
- आटे के लोदे पर हल्का सा तेल लगाकर उसे नम कपड़े से ढककर कम से कम ३० मिनट के लिए रख दें। यह आटे को लचीला बनाने के लिए ज़रूरी कदम है।

2: मसालेदार कीमा (बफ/चिकन)
यह सबसे पारंपरिक और
लोकप्रिय मिश्रण है।
सामग्री:
- ५०० ग्राम कीमा बनाया हुआ भैंस का मांस (बफ) या चिकन
- १ कप बारीक कटा प्याज
- ½ कप बारीक कटी हरी धनिया
- ¼ कप बारीक कटी हरा प्याज (सब्ज़ी वाला प्याज)
- १ बड़ा चम्मच बारीक कटा लहसुन
- १ बड़ा चम्मच बारीक कटा अदरक
- १-२ ताजी हरी मिर्च, बारीक कटी (स्वादानुसार)
- १ छोटा चम्मच जीरा पाउडर
- ½ छोटा चम्मच हल्दी पाउडर
- ½ छोटा चम्मच तिमुर (सिचुआन पेप्पर) - असली स्वाद के लिए ज़रूरी, या फिर साधारण काली मिर्च पाउडर
- १ बड़ा चम्मच खाना पकाने का तेल
- स्वादानुसार नमक
बनाने
की विधि:
- एक बड़े कटोरे में कीमा, प्याज, धनिया, हरा प्याज, लहसुन, अदरक और हरी मिर्च डालें।
- अब इसमें सारे मसाले - जीरा पाउडर, हल्दी, तिमुर (या काली मिर्च) और नमक डाल दें।
- १ बड़ा चम्मच तेल भी डालें।
- अब सारी सामग्री को अच्छी तरह हाथों से ५-७ मिनट तक मसलकर मिलाएं। इससे कीमा चिकना होगा और मिश्रण रसीला बनेगा। मिश्रण गीला होना चाहिए, लेकिन पानी जैसा नहीं।

3: सब्ज़ियों का मिश्रण (विकल्प)
एक स्वादिष्ट शाकाहारी विकल्प।
सामग्री:
- २ कप बारीक कटी पत्ता गोभी
- १ कप कद्दूकस की हुई गाजर
- ½ कप बारीक कटी फलियाँ
- ½ कप बारीक कटा प्याज
- ¼ कप बारीक कटी हरी धनिया
- २ बड़े चम्मच बारीक कटा हरा प्याज
- १ बड़ा चम्मच बारीक कटा लहसुन
- १ छोटा चम्मच बारीक कटा अदरक
- १-२ हरी मिर्च, बारीक कटी
- १ छोटा चम्मच जीरा पाउडर
- ½ छोटा चम्मच गरम मसाला
- ½ छोटा चम्मच हल्दी पाउडर
- २ बड़े चम्मच तेल या पिघला हुआ मक्खन
- स्वादानुसार नमक
बनाने
की विधि:
- कटी हुई पत्ता गोभी में ½ छोटा चम्मच नमक मिलाकर १० मिनट के लिए अलग रख दें। फिर हाथों से अच्छी तरह निचोड़कर सारा पानी निकाल दें। यह कदम सब्ज़ी के मोमो को गीला होने से बचाता है।
- एक कटोरे में निचोड़ी हुई पत्ता गोभी, गाजर, फलियाँ, प्याज, धनिया और हरा प्याज डालें।
- इसमें लहसुन, अदरक, हरी मिर्च और सारे मसाले डाल दें।
- अब तेल या मक्खन डालकर सब कुछ अच्छी तरह मिला लें। स्वाद चेक करके नमक ठीक कर लें।
भाग
4: मोमो बनाना और भाप में पकाना
मोमो
को आकार देना (क्लासिक अर्धचंद्राकार आकार):
- आटा दबाएं: आटे के आराम करने के बाद उसे एक बार फिर १ मिनट तक गूंथ लें।
- लट्ठी बनाएं: आटे की एक लंबी और पतली लट्ठी बना लें।
- गोलियाँ बनाएं: इस लट्ठी को छोटी-छोटी बराबर गोलियों में काट लें (लगभग २०-२४)।
- खोल बेलें: एक गोली लेकर हथेली से दबाकर चपटा कर लें। फिर इसे बेलन से बहुत पतला और गोल (लगभग ३-४ इंच चौड़ा) बेल लें। बाकी की गोलियों को ढक कर रखें। खोल के किनारे बीच से पतले होने चाहिए।
- भरें और बंद करें:
- खोल के बीच में १ बड़ा चम्मच मिश्रण रखें।
- खोल के किनारों पर थोड़ा सा पानी लगा दें।
- खोल को मिश्रण के ऊपर से आधा मोड़कर अर्धचंद्र का आकार बना लें। ऊपर के बीच वाले हिस्से को दबाकर चिपका दें।
- एक सिरे से शुरू करके, ऊपर वाले खोल में एक सिलवट (चुन्नट) बनाते हुए उसे नीचे वाले खोल से दबाकर चिपकाते जाएं। ऐसा तब तक करें जब तक दूसरे सिरे तक न पहुँच जाएँ। यह सुनिश्चित कर लें कि मोमो अच्छी तरह बंद हो गया है।
- बचे हुए आटे और मिश्रण के साथ यही प्रक्रिया दोहराएं।
मोमो
को भाप में पकाना:
- भाप वाले बर्तन (स्टीमर) की टोकरी (या जो प्लेट उसमें आती हो) को हल्का तेल लगा लें ताकि मोमो चिपके नहीं।
- टोकरी में मोमो को इस तरह रखें कि वे एक-दूसरे को छूएं नहीं।
- स्टीमर में पानी को खूब उबलने दें।
- टोकरी को उबलते पानी के ऊपर रखें, ढक्कन लगा दें और मांस के मोमो को १०-१२ मिनट और सब्ज़ी के मोमो को ८-१० मिनट तक भाप में पकाएँ।
- मोमो तैयार हो जाएंगे जब उनका खोल चमकदार और थोड़ा पारदर्शी दिखने लगे। मांस अंदर से पक जाना चाहिए।
- तुरंत गर्मागर्म परोसें।

5: मोमो की ख़ास चटनी (अचार)
बिना
इस तीखी, खट्टी चटनी के मोमो
अधूरे हैं।
सामग्री:
- ४-५ मध्यम आकार के पके टमाटर
- ४-५ सूखी लाल मिर्च (गर्म पानी में १० मिनट के लिए भिगोकर रख दें)
- ४-५ लहसुन की कलियाँ
- १ इंच का अदरक का टुकड़ा
- २ बड़े चम्मच तिल
- १ छोटा चम्मच जीरा
- १ बड़ा चम्मच खाना पकाने का तेल
- ½ छोटा चम्मच हल्दी
- स्वादानुसार नमक
- १ बड़ा चम्मच ताज़ा नींबू का रस या ½ छोटा चम्मच तिमुर पाउडर (सुन्न करने वाले स्वाद के लिए)
बनाने
की विधि:
- एक सूखी कड़ाही में तिल और जीरा को एक मिनट के लिए भूनकर अलग निकाल लें।
- उसी कड़ाही में टमाटरों को तब तक उबालें जब तक उनका छिलका न उतरने लगे। ठंडा होने पर छिलका उतार लें।
- एक मिक्सर जार में छिलके उतरे टमाटर, भीगी हुई लाल मिर्च (कम तीखापन चाहिए तो बीज निकाल दें), लहसुन, अदरक, और भुने हुए तिल-जीरा डालकर बारीक पेस्ट बना लें।
- कड़ाही में तेल गर्म करें। इसमें बना पेस्ट, हल्दी और नमक डाल दें।
- मध्यम आँच पर ५-७ मिनट तक पकाएँ, जब तक कि पेस्ट का कच्चापन चला न जाए और तेल अलग दिखने लगे।
- आँच बंद कर दें। इसमें नींबू का रस या तिमुर पाउडर मिला दें।
- परोसने से पहले ठंडा होने दें। इस चटनी को फ्रिज में जार में भरकर हफ्तों रख सकते हैं।
