 Nepali Momos Chutney (Dip/Sauce) Recipe

The chutney is what truly makes the momo experience. It's spicy, tangy, garlicky, and packed with umami flavor.

Part 1: Classic Red Momo Chutney

This is the thick, fiery, and iconic dip served with every plate of momos.

Ingredients:

  • 4-5 medium ripe tomatoes
  • 4-5 dried red chilies (Byadgi or Kashmiri chilies are great for color and medium heat)
  • 1 tablespoon sesame seeds
  • 1 teaspoon cumin seeds
  • 6-7 cloves of garlic
  • 1-inch piece of ginger
  • 1 tablespoon cooking oil
  • ½ teaspoon turmeric powder
  • ½ teaspoon coriander powder (optional, for depth of flavor)
  • Salt to taste
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon Timur (Sichuan pepper) powder (Highly recommended for the authentic numbing, citrusy taste)

Instructions:

  1. Toast the Spices:
    • Remove the stems from the dried red chilies. Soak them in hot water for 10 minutes to soften them. This will help in making a smoother paste.
    • In a dry pan over medium heat, toast the sesame seeds and cumin seeds for 1-2 minutes until the sesame seeds are lightly golden and the cumin is fragrant. Set aside to cool.
  2. Cook the Tomatoes:
    • In the same pan, boil or roast the tomatoes until the skins split and they become soft. Let them cool, then peel off the skins.
  3. Make the Chutney Paste:
    • In a blender jar, combine the soaked red chilies (drained), peeled tomatoes, toasted sesame and cumin seeds, garlic, and ginger.
    • Blend everything into a smooth paste without adding any water, or with just a splash if necessary.
  4. Cook the Chutney:
    • Heat the oil in a pan over medium heat.
    • Add the blended paste to the hot oil. Be careful as it may splutter.
    • Add the turmeric powder, coriander powder, and salt.
    • Cook the chutney for 7-10 minutes, stirring occasionally, until the raw smell disappears, the color darkens, and the oil starts to separate from the sides.
  5. The Final Touch:
    • Turn off the heat.
    • Stir in the fresh lemon juice and the Timur powder. The Timur powder is essential for that unique, tingling, authentic Nepali flavor.
  6. Cool and Serve:
    • Let the chutney cool down completely. The flavor improves as it cools.
    • Store it in an airtight jar in the refrigerator for up to several weeks.

Part 2: Jhol Momo Chutney

This is a thinner, soupy, and herbaceous gravy that you pour over your steamed momos, transforming them into a delicious, brothy dish.

Ingredients:

  • 2 tablespoons of the Classic Red Momo Chutney (from the recipe above)
  • 1 cup water
  • ¼ cup finely chopped fresh cilantro
  • 1 tablespoon finely chopped green onion (spring onion)
  • 1 teaspoon roasted cumin powder
  • 1 green chili, finely chopped (optional, for extra heat)
  • ½ teaspoon soy sauce or Worcestershire sauce (optional, but adds a great savory note)
  • Salt to taste

Instructions:

  1. Take 2 tablespoons of the prepared Classic Red Momo Chutney in a bowl.
  2. Gradually add 1 cup of water while whisking continuously to avoid any lumps and to create a smooth, thin broth.
  3. Now, add the finely chopped cilantro, green onion, roasted cumin powder, green chili, and soy sauce. Mix well.
  4. Taste and adjust salt if needed.
  5. Pour this liquid chutney directly over your steamed momos to make Jhol Momo, or serve it on the side in a bowl for dipping.

Pro-Tips for the Perfect Chutney:

  • Spice Level: To reduce the heat, deseed the dried red chilies before soaking. To increase it, add more chilies or include a fresh green chili in the paste.
  • Smoky Flavor: For a deeper, smokier flavor, you can char the tomatoes, garlic, and ginger directly over a gas flame or in a pan before blending.
  • Texture: If you like a bit of texture in your chutney, reserve about a quarter of the toasted sesame seeds and stir them in after the chutney is cooked.
  • Timur is Key: This is the secret ingredient. If you can find it, don't skip it! It provides a characteristic numbing sensation (known as "má" in Chinese cuisine) that is central to many Himalayan flavors.

Your delicious and authentic Momos Chutney is ready! Enjoy your momos!

(Classic Red Momo Chutney)

This is the thick, fiery dip you always get with your plate of momos.

(Ingredients):

(Instructions):

(Jhol Momo Chutney)

This is a thinner, soupy gravy that you pour over your momos to make a delicious broth. It's incredibly refreshing.

(Ingredients):

(Instructions):

(Pro-Tips for the Chutney):
